Healthy, Super Bowl Party Food

Super Bowl Sunday is just three days away! Today, I am sharing some healthy finger foods so you don't have to stress about potentially slipping up on your New Years Resolutions. You can still enjoy REALLY good, tailgate-type food without giving into the temptation of all the cream-cheese filled dips. 

 

Here's what's on the menu:  Bell Pepper Nacho Boats, Buffalo Cauliflower Bites, Hummus Pizza with Feta & Sundried Tomatoes, Chocolate Banana Bites, and Yogurt Bark. That's a lot right?! And they were all sooo easy and quick to make!

 

Starting off with Bell Pepper Nacho Boats and Buffalo Cauliflower Bites:

Bell Pepper Nacho Boats: 

 

What you need:

3 tri-color bell peppers

1 lb. ground turkey (or ground beef, whichever you perfer)

3/4 cup of your favorite salsa

Shredded pepperjack cheese for sprinkling

1tsp chilli powder

1 tsp cumin

Salt & pepper to taste

 

Directions:

1. Preheat oven to 375. 

2. Remove core, seeds, and membranes from the bell peppers. Then, slice into wedges/boats and place on a baking sheet

3. Brown the ground turkey/beef in a non-stick skillet until it has lost all of its pink color and is crumbly. Drain off grease. 

4. Mix salsa and spices to the ground turkey. 

5. Spoon combination into the bell pepper boat and top with desired amount of cheese. 

6. Bake for 10 minutes or until cheese is nice and melty

**You can top this with nonfat, plain Greek yogurt as a substitute for sour cream, sliced jalepenos, or with avocado!

I found this recipe on Pinterest. Super easy to make and so delicious that these are even guy approved. If you have leftovers, both of these heat up well for lunches! I even saw someone on Pinterest put their Buffalo Cauliflower Bites in a taco with avocado. Yum!

 

This next one was probably my favorite, Hummus Pizza with Feta & Sundried Tomatoes!

(This was before the oven) 

What you need: 

Naan bread (or you can use Flatouts for a thin, crispy crust)

Hummus, whatever your favorite is (I used Publix classic. I love Publix brand hummus more than any!)

Spinach

Sundried tomatoes (in oil or not in oil)

Feta

 

Directions:

1. Preheat the oven to 400

2. Spread hummus all over Naan bread or Flatout

3. Chop spinach and sprinkle over hummus

4. Sprinkle sun dried tomatoes and feta on top

5. Bake in over for 8-10 min, depending on how crispy you like it

6. Slice it up for easy bite size pieces.

 

Next, I have two desserts! These took minutes to put together and I feel like they have enough flavors to satisfy anyone's cravings! The only things about these are that they need to stay in the freezer all the way up until right before serving because they will melt. 

 

The two desserts are Yogurt Bark and Chocolate Banana Bites!

 

For the Yogurt Bark you need a cookie sheet, parchment paper, vanilla Greek yogurt mixed with honey, your favorite berries, and toppings!

After placing the parchment paper over the cookie sheet, spoon BIG dollops of yogurt onto it and spread around. You really want a thick layer so it is easy to break apart. Top with your favorite berries and then,

Add fun toppings! I used pecans and dark chocolate chips. Last, break the bark up into pieces

 

For the Chocolate Banana Bites, just slice up some bananas and add some peanut butter in between. Then freeze them! This will make assembling them in the melted chocolate so much easier. They freeze up in about 20 minutes, so after that, dip them in melted semisweet chocolate chips. Pop them back in the freezer for an hour. I wish I had a perfect method for melting chocolate, but I am not the best at it. If you have any tips, let me know!
